When I'm traveling, the chef part of me always thinks first about the food of the "area" that I'm visiting. It's not always fancy pants. First thing I have to have when I get off the plane in Cali is a In N Out burger and a Cuban sandwich in Miami. Maybe I'm strange, but my memories of trips always start with the food first. That said, when I go to France, I make sure I get the classics at least once during the trip. I missed my Burgundy trip this summer (see Nicholas Creamery), but I've been dreaming about the Coq a Vin and Beef Bourgogne at Ma Cusine in Burgundy since last year. I challenged Kevin to make it for me and thought you might enjoy it too...
